Clonakilty Distillery, based in the town of Clonakilty in West Cork, have announced the launch of their first own distilled Single Pot Still Irish Whiskey, at this year’s Dublin Whiskey Live to coincide with World Whiskey Day.
Clonakilty’s Single Pot Still Irish Whiskey is triple distilled and crafted using barley grown on the Scully Family farm, which watches over their Atlantic cask warehouse by the Galley Head Lighthouse.
Matured in ex-bourbon casks before being finished in Amontillado and Oloroso Sherry Casks, this brand new whiskey is said to boast flavours of vanilla, kiwi, caramelised pear and dark chocolate, and bottled at 46% ABV.
Clonakilty Distillery filled their first casks on the first of May, 2019. This Single Pot Still distillate went on to be crowned the Best Irish New Make at the World Whiskey Awards, and it is this spirit that has matured into the distillery’s newest release.
Head Distiller Oisín Mulcahy said: “the elements harmonise to deliver the perfect balance of sweetness and a full-bodied character, leaving subtle notes of caramel and citrus peel on the finish.
“It’s in our nature to experiment, here at Clonakilty. That’s why we extended the traditional fermentation period of our washes, allowing the yeast more time to produce the flavours we have come to expect in our award-winning distillate. All our spirit is derived from 100% Cork grown malted and unmalted barley. We also add water, very slowly and gradually, a method called the gentle cut.”

The Clonakilty Distillery Single Pot Still is a non-age statement whiskey, bottled at 46% ABV, non-chill filtered and has a recommended retail price of €59.95. This is currently available at the Clonakilty Distillery, their online store, Irishmalts, James Foxes Cigars and other independent retailers, with the release rolling out across the US and Europe in coming months.
